is very keen to point out that the thing with most food waste is that it’s not
actually waste, it’s just surplus. That’s the idea behind her chutney and jam
company, Rubies in the Rubble. Products are made using fruit and veg that would
otherwise go to landfill, but it’s not substandard or compromised, she says. It’s a premium item.
